THE DISH
Curried zucchini pancakes (recipe here)

THE INSPIRATION
Pipes You See, Pipes You Don’t is the project of Peter Erchick, keyboardist from Olivia Tremor Control (and member of the Elephant 6 collective). This dish has nothing to do with his music, except that he just released a record called Lost in the Pancakes, which I think is the greatest album name ever. So here are some pancakes!

THE RECIPE
Heavily adapted from my mom’s cookbook. Makes 12-15 pancakes.

Ingredients:
2 cups shredded zucchini (about one medium zucchini), patted with a paper towel to absorb some of the liquid
2/3 cups chickpea flour
3 eggs
3 tbsp water
1/2 tsp baking powder
2 scallions, chopped
Up to 1 tbsp dill, chopped
1 tsp curry powder
1/2 tsp salt
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp turmeric
1/4 tsp garlic powder
Olive or vegetable/canola oil for frying
Greek yogurt to serve (optional)

Directions:

• In a medium/large bowl, mix everything except the oil and yogurt.

• Heat oil in a medium pan and fry over medium heat until browned (about 2-3 minutes on each side).

• Stack on paper towels to get rid of some of the oil.
